Shrimp Scampi, Three Ways!

When you think of Shrimp Scampi, the first few things that probably come to mind are shrimp, pasta, and butter. You'd be right on the money with this imagery, as traditionally, these are the primary, and almost sole ingredients of a Shrimp Scampi Recipe. A classic dish, the preparation for this delicious meal is usually simple and not time consuming. Here is our own such version, which will yield a tasty and easy shrimp scampi.
Shrimp Scampi Primavera
Ingredients
1 package of Italian Scampi Flavored Pasta Sides
2 tbsp. butter
1 lb. uncooked shrimp
4 cups assorted fresh vegetables
While cooking the Italian Sides pasta, melt one tablespoon of butter in a skillet and cook the shrimp for a few minutes until they are no longer translucent. Remove the shrimp and sauté your vegetables in the same pan. Once every component is finished, toss the shrimp, pasta and vegetables together. This recipe is exceptionally simple and works terrifically as a quick weeknight dinner!
Although not unheard of, serving Shrimp Scampi with rice may seem a bit unusual. The grains of rice works really well here though, and a squeeze of lemon juice adds cohesiveness to this pleasantly surprising dish which can be prepared in as little as fifteen minutes!
Shrimp Scampi Over Rice
Ingredients
2 tbsp. butter
1 lb. uncooked large shrimp
2 cloves garlic
2 tsp. lemon juice
1 package herb and butter rice mix
½ lb. green beans
Season your shrimp with salt and pepper before cooking them in a nonstick skillet greased with a tablespoon of butter. Towards the ending of cooking, about two- three minutes in, add garlic and stir to combine. When the shrimp are fully cooked, remove them from the heat and add lemon juice and the remaining tablespoon of butter. Serve your finished shrimp scampi over hot herb and butter rice, accompanied by simply blanched green beans.
For a terrifically new twist on this recipe, try this unusual fusion dish. Vibrant bell peppers and spicy ground red pepper add a new dimension of flavor and some definite heat to this southern inspired take on a classic Shrimp Scampi.
